Cooking your fantastic catfish filletts is a snap! Begin with a dry rub, (marinate) the night before cooking. Basically, salt, lemon pepper or "Emeril's All Natural Fish Rub". (Not too much salt). Key is the egg wash. Whip two eggs add a little bottled water with a whisk. Dip the marinated catfish fillets in the egg wash, roll the catfish filletts in seasoned Italian bread crumbs and a little yellow corn meal. (Add Sesame seeds for texture) Oh my goodness fish this good is off the charts tasty!!
